Monday morning arrived on schedule, as Monday mornings reliably did, and Han Seo-yeon was at the corner table of the third-floor cafeteria by six o'clock with her six glass jars and her notebook and the particular quality of calm that came from having successfully completed something she had been anxious about.
The blind date was done. The money had been transferred to her account the previous evening — she had checked it twice before going to sleep, which was one check more than was strictly necessary but felt warranted given the circumstances. She had confirmed the hospital payment was processing. She had drafted a rough schedule for the week: three project reports by Friday, her mother's follow-up appointment on Thursday morning, a team check-in Tuesday afternoon that she was approximately sixty percent prepared for and would be fully prepared for by tomorrow.
Life, in other words, had resumed its normal shape.
She lifted the spoon and tasted jar number one.
Better than Friday's batch. The caramelized onion ratio had been corrected — whoever had re-run the sample had taken the note seriously. There was still a faint imbalance in the back-palate acidity, but it was minor, the kind of thing that would resolve in the next iteration if the fermentation time was extended by roughly twelve hours.
She wrote this down. Moved to jar two.
Outside the cafeteria's single narrow window, the sky was doing the thing it did in October in Seoul when the weather hadn't quite committed to autumn yet: pale grey thinning at the edges, the possibility of sun somewhere behind it but not making any promises. She liked this kind of morning. It was honest about its uncertainty.
Jar two: fine. Jar three: fine. Jar four —
Her phone rang.
Not a message. A call, which meant either her mother or Chae-rin, because those were the only two people who called instead of texting. She looked at the screen.
Chae-rin. Six fourteen in the morning.
Seo-yeon set down the spoon and answered.
"They called," Chae-rin said, without preamble, in the voice of someone who had been awake for some time and had not been awake happily. "His family. They called my mother last night. They want to arrange a second meeting."
Seo-yeon looked at jar number four.
"They want to schedule it this week," Chae-rin continued.
Seo-yeon looked at jar number five.
"Early this week."
Seo-yeon looked at jar number six.
"Seo-yeon."
"I heard you," Seo-yeon said.
"I know we said one time. I know. I'm sorry. But my mother already said yes before she told me, and if I back out now it's going to look like something went wrong on my end, which is going to lead to questions I don't have answers to yet, and —"
"Chae-rin."
"Sorry."
"The agreement was one evening."
"I know."
"One. That was the entire structure of the arrangement."
"I know, and I'm genuinely sorry, and I also —" A brief pause, and when Chae-rin's voice returned it had shifted register, quieter and more careful. "I'll cover the next treatment cycle. The full amount. Whatever the billing comes to after Thursday's appointment."
Seo-yeon sat with the phone against her ear in the empty cafeteria, looking at the six jars in their row.
The next treatment cycle. She knew the projected figure from Dr. Lim's estimate — had it memorized the way she memorized formulas, not by effort but by repetition, because she had run the number against her salary enough times that it had simply installed itself permanently in her working memory. It was not a figure that resolved on its own. It was not a figure that a few weeks of extra work would bridge.
It was, however, a figure that this number covered.
"One more meeting," Seo-yeon said.
"Yes."
"After this, we find a different solution to your situation. One that doesn't involve me pretending to be you."
"Absolutely. Completely agreed."
"I mean it, Chae-rin."
"I know you mean it. I mean it too." A pause. "Thank you. I'm sorry. Those are both true at the same time."
Seo-yeon ended the call, put the phone back in her pocket, and finished tasting jars four, five, and six in the methodical order she had been interrupted from.
Jar four: the back-palate acidity issue she'd noted before. Jar five: slightly over-reduced, the sweetness had concentrated too far. Jar six: actually close to correct, which was more than she'd expected from the batch.
She wrote everything down and went upstairs to begin the day.
What she had not yet thought about, because she was focusing on the notes and the stairs and the deliberately ordinary shape of the morning, was what exactly a second meeting would look like.
She thought about it at the top of the stairs.
An evening again, presumably. A restaurant. Structured time with a clear beginning and end, a menu to occupy the gaps in conversation, the manageable parameters of a formal setting.
She pushed open the door to the seventh floor.
Behind her, her phone buzzed with a message from Chae-rin: *They suggested a walk. Insadong, Saturday afternoon. Casual, they said. Low pressure.*
Seo-yeon stopped walking.
*Low pressure,* she thought. *That is exactly the wrong description.*
---
A restaurant was a controlled environment.
This was the thing she had not fully appreciated until she was standing in the pale autumn sunlight of an Insadong side street on Saturday afternoon, watching Cha Do-yoon walk toward her from the direction of the main road with his hands in his jacket pockets and the unhurried pace of someone who was not running late and also not trying to look like he wasn't running late.
A restaurant had walls. A restaurant had a table between two people and a menu in their hands and a natural rhythm of courses that structured the time and gave you something to do with your attention when you needed to redirect it. A restaurant had a private room where you could compose your expression between the door opening and the other person sitting down.
Insadong in October had narrow streets full of people browsing gallery windows and ceramics shops, had the smell of roasted chestnuts from a cart somewhere nearby, had an entirely unreasonable amount of natural light that left nothing conveniently obscured.
And it had Do-yoon, who stopped in front of her and said, "You found it easily," in the tone of a man confirming a logistical detail.
"I know this area," she said.
"So do I." He glanced at the street ahead of them — the particular look of someone orienting themselves in familiar space. "There's a ceramics gallery about three blocks north that's worth seeing if you haven't been recently. And a tea house on the parallel street if you'd rather start sitting."
Seo-yeon processed this. "You've been here before."
"Several times." He said it matter-of-factly. "I grew up coming here with my grandfather. He has opinions about traditional craft."
This was the most personal information he had volunteered without being asked. Seo-yeon filed it before she could decide whether to file it.
"The gallery," she said. "Walking first."
He nodded and they began moving, falling into step in the way that two people do when they are walking together without having established whose pace takes precedence — a small, wordless negotiation that resolved, after half a block, into something that worked for both of them.
This was the thing about the afternoon that made it more difficult than the dinner.
At the dinner, she had been performing continuously. There had always been a play being run, always a response being calibrated, always the slight cognitive overhead of managing two simultaneous registers at once. The performance had been tiring, but it had also been stabilizing — it gave her something to do with herself, a role with defined parameters.
Walking down a street in daylight, with the ordinary noise of the neighborhood around them and no table between them, the performance had less to grip. The gaps were more frequent and more comfortable than she would have preferred, and in the comfortable gaps she kept finding herself responding to things as herself rather than as the version of herself she was supposed to be presenting.
"You said you know this area," Do-yoon said, after a stretch of companionable silence that Seo-yeon had not intended to allow to become companionable. "For shopping?"
"For the food, mostly," she said, and then heard herself say it and registered, a half-second too late, that this was true for her and had nothing to do with Chae-rin. "There are a few places in the streets behind the main gallery strip that are worth knowing."
"What kind of places?"
"Small ones. The kind that have been there long enough that the owners have stopped updating the signage." She was aware she was speaking naturally and was not doing anything about it. "There's a jeon place on a street that doesn't have a name according to any map I've found. It's been there since before I was born and the haemul pajeon is the best I've had anywhere in the city."
Do-yoon looked at her with the quality of attention she had first encountered at the dinner — not intrusive, but complete. "Better than the standard Gwangjang preparation?"
"Different from it. Less showy. The ratio is weighted toward the green onion rather than the seafood, which sounds like a downgrade but isn't, because the green onion does something at that proportion that —" She stopped. Resumed. "It's good. It's worth the walk."
"We should go," he said.
"Today?"
"Unless you have a reason not to."
Seo-yeon did not have a reason not to, which was itself a reason not to — going to a specific place she actually knew and loved, as herself, while pretending to be someone else, felt like a more acute form of the deception she was already running. But she could not explain this, and the alternative was claiming she had a reason when she didn't, and his expression was the expression of someone who would notice the invention.
"Fine," she said. "It's a twenty-minute walk."
"That's fine," he said.
They walked.
---
The ceramics gallery was small and well-lit and contained, among other things, a display case near the back wall that held a row of celadon bowls in varying sizes — the kind of work that was technically accomplished enough to be restrained about it, not trying to impress.
Do-yoon stopped in front of the case.
Seo-yeon stopped beside him, which meant she was standing slightly closer than she would have chosen to stand if she had planned the geometry of it in advance, but the case was near the wall and there were other people in the gallery and the spacing was simply what it was.
"The glaze on the second one," he said.
Seo-yeon looked at the second bowl. It was a deeper green than the others, with a crackle pattern in the glaze that caught the light differently depending on the angle.
"The reduction firing," she said. "The color comes from how much oxygen is in the kiln during the final stage. Less oxygen, deeper color."
"You know ceramics."
"I know a small amount about a large number of things related to how processes produce different results depending on small variables." She paused. "It's an occupational artifact."
"What occupation?"
She had walked directly into this. She felt the edge of it as soon as the sentence was out of her mouth — the logical follow-up question that she did not have a safe answer to, because Chae-rin's occupation was related to her father's business interests and had nothing to do with reduction firing or fermentation or the physics of heat and material transformation.
"I've always been curious," she said, which was true and answered nothing. "I read about things."
Do-yoon said nothing for a moment. He was still looking at the bowl.
"The reading theory," he said eventually, in a tone she could not entirely read. "Right."
Something in that response told her he had noticed the door closing again. She had watched his face closely enough over the past two hours to know the difference between a genuine acceptance and a noted one.
This was a noted one.
She stepped back slightly, creating a more deliberate distance between them, and looked at the bowl from the new angle.
The crackle pattern shifted in the light. It looked different from here — less like a flaw and more like something that had happened naturally in the process, unavoidable and specific to that exact piece.
She was thinking about this more carefully than the situation required.
"We should find the jeon place," she said, "before it gets too late in the afternoon."
"Yes," Do-yoon agreed, and followed her toward the door.
---
The jeon place was where she had said it was, on the street that didn't appear on maps, operating out of a narrow shopfront that had a handwritten menu board and four tables and a woman at the griddle who did not look up when they entered.
They ate standing at the narrow counter along the window — the table nearest the door had been claimed by two elderly men playing baduk with the focused silence of people who had been playing there for years — and the haemul pajeon arrived in a cast iron pan still making the sound of hot oil settling.
Do-yoon ate without ceremony and without performing an opinion about it, which Seo-yeon found, against her better judgment, a point in his favor. People who performed enjoyment at food were harder to be around than people who simply ate it.
After a few minutes he said: "You were right about the onion ratio."
"I usually am," she said, and then heard herself repeat the line she had used at the dinner and felt the echo of it.
He looked at her sideways. "You said that before."
"It keeps being true."
The corner of his mouth moved — the same almost-expression from the dinner, the thing that came close to a smile without fully committing. She had thought, watching it the first time, that it might be a habit of his — not reluctance, exactly, but a long practice of not letting things all the way through.
She looked back at the jeon.
The afternoon had been easier than she'd feared and harder than she'd hoped, which was roughly the worst possible distribution. Easier because he was, without the formal scaffolding of the dinner, genuinely uncomplicated to be around — direct, unhurried, more willing to sit in silence than most people she spent time with. Harder because that quality made the performance more difficult, not less. It was easier to perform for someone who was also performing. It was harder to maintain a role in front of someone who, as far as she could tell, was simply being themselves.
She was thinking about this in the way she thought about formula problems — running it, testing the variables — when she became aware that he had said something.
"Sorry," she said. "What?"
"I asked if you wanted more," he said, indicating the remaining section of the jeon.
"Oh." She looked at it. "Yes, actually."
"Good," he said, and cut it evenly in half without further discussion.
Seo-yeon noted this. She did not intend to note it. She noted it anyway.
---
They parted at the entrance to the Anguk station, where the afternoon crowd was beginning to fill in with the unhurried density of a Saturday that was not yet over.
Do-yoon said, "Thank you for the recommendation," which was a straightforward thing to say and which he said in a straightforward way.
"It was already there," Seo-yeon said. "I just knew where it was."
"That's what a recommendation is."
She looked at him. He was watching her with the steady, unhurried quality of attention that she had been navigating around all afternoon, and she thought — briefly, against her will — that it must be very tiring to be the person that attention was usually directed at in a professional setting. It was a specific kind of gaze. Clear and complete and not unkind.
"Goodbye, then," she said.
"Goodbye," he said.
She went down into the station.
On the platform, waiting for the train, she stood with her bag on her shoulder and her hands in her jacket pockets and thought, with the methodical honesty she applied to formula problems when they weren't working:
*The second meeting was easier than the first. That is the problem.*
*The first meeting was supposed to be the only meeting. The second was supposed to be a correction. The second was not a correction.*
*He is easier to be around than he is supposed to be, and I am worse at maintaining the distance than I expected to be, and neither of these things is useful information.*
The train arrived. She got on.
She called her mother from the train, because she called her mother most evenings and today was not a reason to stop. Her mother asked how the day had been. Seo-yeon said ordinary, which was inaccurate in several specific ways and accurate in the most important one: nothing had changed. She was still who she was. The situation was still what it was.
*Ordinary,* she had said.
Her mother said that was good. Ordinary was good.
Seo-yeon agreed and said goodnight and put the phone in her pocket.
---
At ten forty-three, she was in bed with a half-read article on fermentation chemistry and the reasonable expectation of sleep within the next twenty minutes, when her phone buzzed on the nightstand.
An unknown number.
She frowned, opened the message.
*I forgot to ask earlier. Do you have any objection to fleur de sel as a finishing application in general, or is it context-dependent?*
Seo-yeon sat up.
She looked at the number, then looked at the message, then looked at the number again. She opened her contacts, found the entry Chae-rin had added to her phone three days ago under the name she had been told to use, and cross-referenced.
It matched.
Cha Do-yoon had her number. Chae-rin had given it to him, presumably at the family's request for contact information, without telling Seo-yeon this had happened. And he had used it, at ten forty-three on a Saturday night, to ask about finishing salt.
Because he had apparently been thinking about the broth from the dinner for a week.
Seo-yeon put the phone down. Picked it up. Put it down again.
This was not a situation the original plan had accounted for. The original plan had been: one dinner, one bad impression, one clean exit. The plan had since expanded to include a second meeting, and now a direct line of communication, and a question about salt that was so specific it could only have come from someone who had been sitting with a culinary disagreement unresolved in the back of their mind for seven days.
She picked the phone up and typed: *It depends on the application. Fleur de sel has its place, but the crystal size makes it unsuitable for anything that needs even distribution through a liquid base.*
She read it back. Sent it.
Three seconds passed.
*That's what I thought. The chef confirmed the same thing when I followed up.*
Another three seconds.
*You were right.*
Seo-yeon stared at the screen.
She typed: *I know.* Deleted it. Typed: *Thank you for checking.* Deleted that too. Sat for a moment. Then typed: *The correct application is context-dependent. Most things are.*
Sent it before she could revise it further.
The reply came back in under ten seconds: *Agreed.*
And then, after a pause of perhaps thirty seconds — long enough that she had begun to set the phone down — one more message:
*Good night.*
Seo-yeon looked at those two words for longer than two words warranted.
She typed: *Good night.* Sent it. Put the phone on the nightstand face-down.
Stared at the ceiling.
"I'm in trouble," she said, out loud, to the ceiling, which offered no useful input.
She turned off the lamp.
She did not fall asleep within twenty minutes.
You've reached the end of this chapter
